Spring Rolls: An Asian Classic That Is Well-Loved by Us Indians!

About Chicken Spring Rolls

Spring rolls are a popular group of snacks in Southeast Asia. Though originating in Mainland China, Indians with their impeccable culinary skills have turned spring rolls into an Indian favorite too.

Packed with the goodness of freshly minced chicken and vegetables, chicken spring rolls can be enjoyed at house parties, get-togethers, family outings and even corporate gatherings, with soft drinks, mocktails and cocktails. They are probably the most multi-purpose snacks you will come across in a lifetime – yes, they are THAT popular.

Making chicken spring rolls at home is quite easy – you need just about 30 minutes. You can get your meaty ingredients at Licious.

We have freshly minced chicken keema. Our chicken mince is made from boneless chicken breast meat, each breast is washed thoroughly before being minced. Once done, the mince is vacuum packed to maintain freshness.

Chicken Mince

Ingredients (for a serving of 8 chicken spring rolls, medium size):

  • 2 teaspoons cornflour
  • 500 gm minced Licious fresh chicken
  • Refined oil (olive pomace oil/flaxseed oil/almond oil for healthy alternatives) as required
  • 6-8 cloves of garlic
  • 4-5 green chillies
  • 2 cup water
  • 16 spring roll sheets

Marination mix:

  • 2 tablespoons soy sauce
  • 4 tablespoons chilli garlic paste
  • 1/2 teaspoon black pepper powder
  • 2 tablespoons cornflour

Filling mix:

  • 8 cloves minced garlic
  • 200 gm fresh noodles
  • 2 cup shredded cabbage
  • 2 teaspoons finely chopped ginger
  • 1 cup finely chopped spring onion
  • 1 cup shredded carrot 

Method:

  • Marination mix

In a glass bowl, mix soy sauce, pepper and cornflour. Take the garlic and chillies and blend them together to form a fine paste. Add this paste to the soy sauce mix as well. Add Licious minced chicken to the whole thing and mix everything well, for 5 mins. Leave this mixture for 10-15 mins and allow the chicken to marinate.

  • Cooking the chicken

Now heat 1 tbsp oil in a large pan on medium flame. Add the marinated chicken to the pan and stir fry it until brown. Remove the mixture from the flame once done and set it aside for filling in the spring roll sheets.

  • Preparing the filling

Add spring onion, garlic and ginger to the same pan used earlier for stir-frying the chicken and cook for 30 seconds. Boil the noodles and prepare them to be added to the main mixture. As the noodles become soft, add in the carrots and cabbage. Stir well and turn the heat to medium. As the final step, add the chicken and stir fry for 2 more minutes. Set aside to cool completely.

  • Assembling the spring rolls

In a different bowl, mix together the remaining cornflour and water. Keep the mixture aside. Fill one corner of the spring roll sheets with 2 tbsp of the chicken, noodles minced into small pieces, and vegetable mix. Roll the sheets and apply a bit of cornflour and water on the edges to seal them and prevent leakage of the filling in the next step.

  • The final round of frying

Take a frying pan and heat enough oil in it over high flame, suitable for deep frying. Dip a small piece of filling mixture to see if it fries and floats to the surface. This indicates that the oil is sufficiently heated for deep frying. Place the spring rolls carefully in the boiling oil and deep fry till golden brown. Drain excess oil on a paper towel and serve them hot with your favourite dip/dressing. You can also pair this spring roll recipe with cocktails/mocktails as per your choice.
