  1. Add the chicken pieces to a bowl. Then add spices and masala such as ginger-garlic paste, cumin seeds, carom seeds, cumin powder, coriander powder, turmeric, chilli powder, garam masala, lemon juice, chopped coriander and salt to taste. Mix all the ingredients until the chicken pieces are evenly coated. Let the pieces marinate in a refrigerator for 20-30 minutes.
  2. Take a bowl and break one egg in it. Add the chickpea flour and mix well.
  3. Add the Egg-Chickpea flour mix to the chicken pieces. Make sure all the pieces are coated.
  4. Take a baking tray and place a rack on it. Spray some oil on it. Put the pieces on the rack and brush or spray them with little oil on top.
  5. In a preheated oven, bake the chicken pieces at 230-degree Celsius for 10-12 minutes each side until they turn golden and crispy. Serve hot with coriander chutney.

Using rack in the baking tray is not a must. However, it lets the Pakoras cook evenly from all sides.
