  1. In a pot, heat some oil and fry the onions until golden brown. Take them out on a kitchen tissue placed on a plate. In the same pot, add the boiled eggs and lightly fry them. Keep them aside.
  2. Add some oil to the same pot and add half of the whole spices. Once they splutter, add the ginger-garlic paste and cook until the raw scent disappears. Now, add chilli powder, mace powder, garam masala, yoghurt, salt and mint leaves. Mix well.
  3. Add the fried eggs to the yoghurt gravy and let it cook. Add ¾th amount of fried onions and let the gravy cook on low flame. Once it thickens, remove the pan from the stove and keep it aside.
  4. Add the rest of the whole spices in 6 cups of water and bring it to a boil. Then add the soaked rice. Let it simmer for a few minutes. Then drain the rice and reserve a cup of water.
  5. In the gravy pot, spread the rice on top of the gravy and eggs. Add mint leaves and fried onion on top. Pour the soaked saffron milk, kewra water, and the reserved cup of rice water. Seal the pan with a tight lid and secure it with an aluminium foil. Cook the rice on high heat for about 5-6 minutes and then lower the flame and let it cook for another 10 minutes.
  6. Let the biryani rest for 5-10 minutes. Serve hot with raita.

You can also make a dough seal for the pot to cook it in dum-style. Knead the dough and make a long pipe. Cover the rim of the pot with a lid and seal it with the prepared dough.
