Mangsher Jhol Recipe
The recipe for all special occasions, this mutton curry recipe is one of the most consumed Bengali dishes in India. The recipe is easy to understand and does not take too much time.
Instructions
  1. Take a bowl and place the mutton pieces in it. Marinate with onion paste, ginger and garlic paste, turmeric powder, lemon juice, and mustard oil. Mix it well. Keep it aside in the refrigerator for 1-2 hours.
  2. Sprinkle salt and turmeric on the potatoes and fry them in a pressure cooker till they turn golden brown. Set them aside.
  3. Add ghee to the same oil and add the bay leaves, cardamom, cinnamon stick, cloves and red chillies.
  4. When they turn fragrant, add chopped onions and saute them well.
  5. Add sugar after that. Let it caramelise.
  6. Add the rest of the ginger-garlic paste. Mix well.
  7. Add the marinated curry cut pieces, mix well and cook for 5 minutes.
  8. Now on a low flame, add whisked curd or yoghurt. Stir continuously.
  9. The mutton pieces will start releasing water.
  10. Now, add all the spices like turmeric powder, garam masala, cumin powder, coriander powder, and red chilli powder.
  11. Mix them all well and add the fried potatoes.
  12. Add warm water as well.
  13. Now, close the pressure cooker and let the curry cook on a medium flame for 10-12 whistles.
  14. Serve hot once done!
Recipe Notes

Tips and Tricks

Stir continuously and saute well to give it a red colour. Do not add yoghurt on high flame. Make sure the dry spices do not stick to the cooker.

Serving Suggestions

Serve with rice or roti.
Add raita or curd on the side.
Finish the meal with kheer.
