Should I cook the fried rice on the high flame?
Yes. The wok or pan that you are using must be hot enough when you add the vegetables and rice. The key is to cook everything together quickly so that the rice remains hot but is not overcooked.
Can I add more soy sauce?
Ideally, a toasty and tawny fried rice will have only one or two tablespoons of soy sauce. This will make the rice light brown. However, if you like to have a strong flavour, then you can add the say sauce over your portion separately.
