  1. Take a deep vessel and fill it with enough water. On the side, wash the rice. Then boil the rice with salt and oil. Cook it until it becomes bite-like and then rinse in cold water. Add 1 tablespoon of oil on it. The oil helps to keep each grain of rice separate. Let it rest for 10 minutes.
  2. Take a wok and heat oil in it. On high flame, add the garlic and onions. Sauté until onion turns golden brown.
  3. Add the chicken and celery and stir-fry it well.
  4. As a final step, add the rice, soya sauce, vinegar and chilli sauce. Stir the rice well until all the sauces are mixed and serve it hot.

It is important to rinse the rice in cold water after boiling it. You can then spread it on a baking sheet and let the excess moisture evaporate. This prevents the grains from lumping together.
