Chicken and Sausage Jambalaya

A Louisiana speciality, this is a chicken, sausage and rice feast. Spicy link sausages fried and chopped. Onion, celery and pepper fried in the sausage fat and infused with cayenne pepper and southern spices. Premium chicken breasts cut into one-inch pieces added to rice and broth and cooked till done.
