Port Braised Lamb Shanks
Seasoned lamb shanks browned and slow cooked for two hours or more along with garlic, onions, carrot, celery, red wine or port.

4 approx 400g/13oz each (Note 1) - 2Salt and pepper
- 3Olive oil, separated
2 Tbsp - 4Garlic cloves, minced
2 - 5Onion, finely chopped (white, brown, yellow)
1 - 6Celery stalk, finely chopped
1 (optional, but recommended) - 7Carrot, finely chopped
1 (optional, but recommended) - 8Flour
3 Tbsp - 9Chicken Broth
2 Cups - 10Port
3 Cups (Note 2) - 11Red wine
1 1/2 Cups (Note 3) - 12Tomato paste
3 Tbsp - 13Thyme
5 Sprigs - 14Dried bay leaves
3 - 15Fresh parsley (optional)
