Crab Cakes
Crab meat mixed with cooked fonio, boiled plantains, lime juice, the cilantro, onion, eggs, salt and pepper and fried or baked till crisp on the outside.



- 1Green plantain (about 10 oz.)
1 Large - 2Red palm oil or vegetable oil
5 Tbsp - 3Fonio
1/3 Cup - 4Plus 1/2 tsp. fresh lime juice
2 Tbsp - 5Finely chopped cilantro
1 Tbsp - 6Finely chopped yellow onion
1 Tbsp - 7Egg, lightly beaten
1 Large - 8Kosher salt and freshly ground black pepper
- 9Lump crabmeat
1 Pounds - 10All-purpose flour
1/4 Cup - 11Finely chopped fresh ginger
1 Tbsp - 12Vegetable oil, for frying
- 13Lime wedges, for serving
