Instructions
  1. In a pot over medium heat, add the water and bring it to a boil. Cook the pasta according to the package instructions. Reserve one cup of the cooking water if you need to thin the sauce later.
  2. In a saucepan, add the milk, ground cloves and bay leaf. Stir over low heat, but do not allow the milk to boil.
  3. Add the butter to another saucepan over medium heat and let it melt. Once it’s melted, throw in the garlic and shallots. Cook for three minutes or until it’s nice and glossy.
  4. Whisk in the flour and cook for a minute to remove the starchy taste.
  5. Remove the bay leaf from the simmering milk and slowly pour it over the flour mix; constantly whisk to avoid clumping.
  6. Once all the milk and the flour have been mixed well, allow it to simmer for three to four minutes or until the mixture has thickened.
  7. Add in half the lemon zest, nutmeg, ½ tsp pepper, 1 ½ tsp salt, and peas. Reduce the flame to low and keep stirring occasionally.
  8. In a bowl, combine 1 ½ tsp salt, ½ tsp black pepper and lemon zest. Set aside.
  9. Line a baking sheet with aluminium foil. Pour in the olive oil and spread it evenly with your fingers over the foil. Add in the salmon fillets and coat them well with the oil. Rub the lemon and spice mixture onto each salmon fillet evenly.
  10. Now, broil the salmon fillets for about five to six minutes until the flesh turns an opaque pink colour.
  11. Once the salmon is done, flake it and set it aside.
  12. Add the pasta into the creamy sauce and fold in gently. Add in the salmon and coat well. If it is too clumpy or thick, add in a little of the reserved pasta water until you get the right consistency.
  13. Garnish with cheese and parsley. Serve hot, and enjoy!
