Instructions
  1. Add chicken to a bowl with 1/3 cup flour and coat well. Tap any excess flour, dip the chicken tenders in the egg and milk mixture, and let the excess drip off. Then add the chicken to the breadcrumbs, cornmeal and seasoning mix.
  2. Heat oil in a large skillet over medium heat. Once hot, add the chicken tenders and cook well on each side for about three to four minutes or until the pieces are golden brown and crispy.
  3. Serve hot with your favourite dip or sauce. Enjoy!
Recipe Notes
  • Panko breadcrumbs and cornmeal work together to create that extra crispy texture. Do not use regular breadcrumbs, as you will not get that crunch you want.
  • Always keep one hand clean to avoid lumps in the chicken coating. Use one hand to only transfer the chicken from the wash to the breadcrumb mix.
  • Ensure that you push the breadcrumbs and cornmeal mix well into the chicken, so it sticks.
  • Avoid crowding the pan. Overcrowding will make the tenders soggy. When the pieces are spaced nicely, the chicken tenders will become nice and crispy.
  • Do not overcook chicken tenders, or they will get too dry. Cook them until they are just done.
