  1. In a large pot, add the chicken pieces along with some salt, pepper, and water to cover the pieces. Bring the water to a boil and cook on low flame for 10 minutes or till the chicken is cooked through. Set aside
  2. Take a large bowl and add the onion, tomato, celery stalks, iceberg lettuce and cucumber Take another bowl and mix the mayonnaise, mustard sauce, red wine vinegar, and lemon juice nicely.
  3. Combine both the mixtures with the chicken pieces and toss the ingredients well
  4. Serve the mixture in your choice of bread and serve it with your favourite beverage
Recipe Notes

You can also toast the bread beforehand if you like your sandwich hot.   This recipe can also be made into an Indian Chicken Salad Sandwich Recipe by excluding the sauces and cooking the meat with very little spices such as turmeric, red chilli powder, and coriander powder. The vegetables can be mixed once the chicken is cooked with the spices and served with your choice of bread.
