  1. Preheat the oven to 200° C. Season the fillets with thyme, lemon zest and oregano on both sides and top with a slice of lemon. Now, roll the fillets tightly and place one lemon slice on top of this roll. Secure the roll with a cooking string and sprinkle some black pepper powder.
  2. Line the tray with parchment paper and brush some olive oil. Place the rolled-up fish fillets and bake for 15 minutes or until nicely cooked.
  3. Serve hot with a bowl of fresh green salad or steamed vegetables.
