Mexican Style Egg Omelet Recipe
Instructions
  1. Crack the eggs in a bowl, add salt, pepper and oregano, pepper and whisk until everything is well combined.
  2. Chop the chicken frankfurters into discs and then fry them in some butter in a frying pan.
  3. Melt the remaining butter in the same nonstick pan over medium heat and make sure to coat the entire pan with butter.
  4. Pour the whisked eggs into the omelet pan and spread it out evenly.
  5. As the eggs begin to set, add the fried frankfurters and peppers to cover half the omelette. You could also add cheese and jalapenos for some heat.
  6. Once the omelette is fully set, fold it to cover the toppings, gently remove it onto a plate and serve hot with some buttered toast for a delicious breakfast.
