Wash the meat and make it as clean as possible. Pat it dry. To the spice mix in the pan, add Kashmiri red chillies, cumin seeds, asafoetida, and fry for a few seconds. Once it turns aromatic, add the mutton pieces and stir well but gently. Cover the cooker with a lid and let the mutton pieces cook for 5-6 minutes on medium flame. As you see the mutton turning brown, remove the lid and add ½ cup of water. This will make the meat soft and succulent and help soak all the flavours of the spices. Lower the flame and let the mutton cook for 10-15 minutes.
