  1. Roast the breadcrumbs: Preheat your oven to a temperature of 180 °C. Take a tray and spray cooking oil on it. Then spread the breadcrumbs evenly across the tray. Roast the breadcrumbs for 3-4 minutes until they turn golden. Take your golden breadcrumbs into another bowl and add salt and pepper to taste, along with your parmesan cheese. Mix and set aside.
  2. Prepare the batter: Increase the temperature of your oven to 220 °C, take a baking tray and spray it with cooking oil. In a bowl, mix the mayonnaise, salt, pepper, egg, peri-peri seasoning, and all-purpose flour for the batter. Mix well until all ingredients are combined.
  3. Coat the basa finger cuts in batter and cook: Dip the fish fingers in the batter and use a pair of tongs to toss the batter-dipped fish into breadcrumbs. Coat on all sides and transfer the coated fish onto your baking tray that has been greased with oil. Spray a little refined oil over your fish, put the tray in the oven and bake for 10-12 minutes or until the basa fish fingers are crisped to perfection.
