Ingredients
For Steamed Fish
  • 500gms Basa fish
  • 2tbsp fish sauce
  • 1tbsp brown sugar
  • 1/2tbsp garlic
  • Some lemongrasschopped
  • 8-10 kafir lime leavesshredded
  • 6pieces galangalsliced
  • 6 Thai red chillieswhole
  • Sesame oil
For the Sauce
Instructions
  1. Take a steamer. Add the fish fillets in a bowl. Scatter some galangal, lemongrass, kaffir leaves, fish sauce and red chillies. Steam the fish until it is cooked through.
  2. Heat some oil in a pan. Add the garlic and spring onions. Fry them for 30 seconds. Then add soy sauce, fish sauce, and brown sugar. Add lime juice and let the sauce rest.
  3. Take out the fish in a plate and pour the prepared sauce over it. Also, pour the leftover liquid from the steaming bowl. Serve hot.

Recipe Tip

If you don’t have a steamer then fill a wok with water till it is ¼ full. Bring it to a simmer. Place foil trivets in the wok. Then put the fish in a plate and place it over the foil trivets. Cover the lid and steam for 5-8 minutes.
