  2. Preheat oven to 180°c. Line a baking tray with parchment paper and keep it aside. Heat oil in a frying pan and add the sliced onion. Fry for about 8 to 10 minutes until soft and tender. Remove the cooked onion to a mixing bowl, and add the apple and sage.
  3. Slit the sausages and remove the casing. Put the sausage meat into the bowl with the onion, apple and sage. Mix well with your hands. If using minced meat, you can season it with the salt and spices of your choice. Make equal sausage-shaped portions and keep them aside.
  4. Unroll the sheets of pastry and cut them into equal rectangles. Place one portion of the sausage meat on the left side of each pastry. Lightly brush the other edge of the pastry with egg. Slowly, wrap the pastry over the meat to enclose it. Press and trim. Place all the pastries on the baking tray with the enclosed part down. Brush each pastry with a beaten egg. Slash each roll on the top in different places with a knife.
  5. Bake for around 30-35 minutes until golden brown and crisp. Serve with your favourite sauce or salad.
