Instructions
  1. In a shallow pan, add oil and let it heat. Then add chilli powder, coriander powder, turmeric, pepper, salt and curry leaves. Stir well and sauté for 5 minutes on a low flame.
  2. Cut the boiled eggs into halves and place them yolk-side down in the sautéed spices. Fry for a minute and then flip carefully. Cook for another minute and turn off the flame.
  3. Garnish with chopped coriander and serve with pulao rice or naan.
