Instructions

  1. Take a bowl and add hoisin sauce, soy sauce, rice vinegar, sugar, chilli sauce, corn starch, and sesame oil. Set the bowl aside for further use
  2. Take a pan and add cashew nuts in it. On medium-high flame dry roast the cashew nuts. Make sure they do not turn brown. Keep them aside.
  3. Take a wide bowl. Add the chicken pieces to it. Then add pepper, salt and cornflour. Coat the pieces in this mix and marinate for 7 to 10 minutes. Take a wok and heat some oil in it. On high flame, add the marinated chicken pieces in batches and stir-fry them on both sides evenly for a minute. Do not brown the chicken pieces. Just lightly sear them.
  4. Pour the remaining oil in the wok. Add the spring onions, garlic and ginger. Sauté for a minute until the ingredients become aromatic.
  5. Add the stir-fried chicken pieces and stir them. Then pour the sauce from the bowl and cook for a few minutes until the sauce thickens slightly. Toss the mixture frequently. Then add the cashews and stir the ingredients again. Turn off the heat once the pieces are cooked through. Garnish with sesame seeds and serve hot with steamed rice.
