  2. Heat oil in a pot, and add the onions. Fry till the onions become brown and translucent.
  3. Add the tomatoes along with a splash of water. Cover the pot and cook on low heat for five minutes. Once the tomatoes become soft, turn the heat to medium and add the ginger, garlic, and spices. Stir well, and mash the tomatoes and onions with the back of your spatula.
  4. Once the masala is cooked and the oil separates, add the chicken pieces.
  5. Sauté on high heat. Stir constantly until the chicken changes colour, and there is no pink colour visible.
  6. Add around 2.5 cups of water and bring to a boil. Cover the pot and simmer for half an hour on low heat.
  7. Once the chicken is cooked well, add the garam masala and garnish with dried fenugreek or chopped coriander leaves.
  8. Serve hot with rice or roti. Enjoy!
  9. Recipe Notes
  10. The whole spices used in the recipe are optional, but they are highly recommended.
  11. Paprika or Kashmiri red chilli powder has a mild flavour and is not too spicy. This allows you to add more for that deep colour. However, if you prefer your dishes spicy, you can add red chilli powder to enhance the spicy flavour of the dish.
  12. To give the gravy more thickness and texture, you could grind the onion and tomatoes once they are cooked well with the spices.
