For the salad dressing

  1. Place a large pan on medium high heat and add oil to it. Once the oil is hot enough, add the chicken breasts to the pan. Season it with salt and red chilli flakes. Let it cook for 5-10 minutes on each side and then set it aside. After a while, shred the chicken in a plate.
  2. In a bowl, add the dressing ingredients such as rice vinegar, soy sauce, sesame oil, chilli sauce, minced garlic clove and ginger. Mix it all together and add pepper for taste.
  3. In a large salad bowl, add shredded Napa cabbage, red cabbage and finely chopped carrots. Then, add the shredded chicken to the bowl. Pour the salad dressing in the bowl and toss everything using two big spoons.
  4. Garnish it with finely chopped coriander leaves and toasted sesame seeds. Sprinkle some fried chow mein noodles and serve the Chinese chicken salad in a bowl with a refreshing drink.
