Egg Bhurji Recipe

Instructions
  1. Begin by whisking your eggs in a bowl along with the salt
  2. Once well-combined heat your oil in a non-stick frying pan on a medium heat
  3. Toast your cumin seeds and curry leaves first
  4. Then add in your ginger & garlic paste and fry for a few minutes
  5. Toss in your chopped onions and fry until translucent
  6. Your diced capsicum goes in next, cook for a few minutes
  7. Next, add your spices – turmeric and chilli powder. Stir this through and cook until the raw smell of the spices disappears
  8. Then add in your whisked eggs and begin to scramble them
  9. Your eggs should be well cooked and golden brown
