Instructions
  1. In a large bowl, toss the chicken with black pepper and 2 tablespoons of salt. Cover and refrigerate for at least 3 hours.
  2. In a large bowl, whisk eggs, buttermilk and hot sauce together. In another bowl or plate, mix flour and remaining 4 teaspoons of salt. Add oil in a deep wok or Dutch oven and heat it over medium-high flame until the oil reaches 160°C.
  3. Pat the chicken pieces dry and dredge them in the flour mixture one by one. Shake off the excess and then dip in buttermilk mixture, letting the excess drip back into the bowl. Coat the chicken again in flour mixture and place on a plate. Fry the chicken in batches, continuously turning the chicken until golden brown and crisp.
  4. Place the fried chicken on a wire rack and let it slightly cool. In a small bowl, whisk together cayenne, brown sugar, chilli powder, garlic powder and paprika and then carefully whisk in a cup of frying oil.
  5. Brush this spicy oil on the chicken and serve with bread and pickles.
