  1. In a mixing dish, combine the prawns, salt, and turmeric powder.
  2. Dry-roast dried red chillies in a nonstick skillet before transferring to a bowl.
  3. In the same nonstick pan, dry roast the coriander seeds, cumin seeds, cloves, and black peppercorns until aromatic.
  4. Combine all of the spices in a grinder jar. Grind them along with the garlic, tamarind pulp, and enough water to make a smooth paste.
  5. In the same nonstick pan, heat the ghee and add the ground paste, mixing well and sautéing for 2-3 minutes.
  6. Stir in the yoghurt and heat for 1 minute. Mix in the salt as well.
  7. Mix in the marinated prawns. Cook for 4-5 minutes, covered.
  8. Stir in the jaggery and simmer for another 2-3 minutes.
  9. Cook for an additional 1-2 minutes.
  10. Transfer to a serving dish, top with curry leaves, and serve immediately.
