  1. Take a large skillet and heat oil over it.
  2. Once the oil is heated, add the chicken pieces and stir-fry for 4-5 minutes.
  3. Now, add the red curry paste, zucchini, bell pepper, onion, and carrot. Please give it a good mix.
  4. Keep on stirring for a few minutes.
  5. Take a small bowl and mix the cornstarch with coconut milk.
  6. Make sure it has no lumps.
  7. Now, add this mixture to the skillet. Mix it well.
  8. Cover and let it simmer for 5 minutes.
  9. Once done, bring it to a boil and cook over medium heat for a minute.
  10. Add in the cilantro leaves. Stir to mix.
  11. Turn off the heat.
  12. Serve hot!

Tips and Tricks

  • Add red chilli powder if you want the curry to be spicy.
  • Make sure the red Thai curry paste has a long shelf life before you use it for the recipe.

Serving Suggestions

  • Serve with basmati rice or Jasmine rice.
  • Garnish with onion rings on the side.
  • Use a green salad on the side.
