How to make Mumbai-style Chicken Baida Roti at home?

Instructions
  1. Add the maida, oil, salt, one egg, and baking powder in a bowl.
  2. Knead all the ingredients with ¼ cup of water into a soft dough. Divide the dough into four equal portions.
  3. Roll each portion into 8-inch square rotis and keep aside. 
  4. In a non-stick pan, heat oil and add the onions. Saute for a minute. 
  5. Add ginger-garlic paste and saute.
  6. Now, add the chicken mince and mix well. Cook for about two minutes. 
  7. Add green chillies, tomatoes, red chilli powder, turmeric powder, and salt and mix. Add about ¾ cup of water and mix. 
  8. Add garam masala powder, cover, and cook until the chicken mince is completely cooked and the mixture is dry.
  9. In a bowl, break the remaining eggs and beat well. 
  10. Heat a tawa, and place a roti on it. Cook for around two minutes on each side. Drizzle a little oil on the sides of the roti and cook.
  11. Pour a little egg on the top and spread well. Cook for about a minute. Flip the roti and cook until the egg is done. 
  12. Now, place some chicken mince mixture in the middle, and fold the sides of the roti to make a square shape. Press the roti and pour some more egg on top. Flip it, drizzle oil all over the sides, and cook on both sides until it turns golden and crisp. Repeat for all the rotis. 
  13. Cut and garnish with coriander leaves. 
  14. Serve hot, and enjoy!
