  1. To prepare the chargha, first, mix together all of the spices and yoghurt in a bowl. 
  2. Rub the spice mixture all over the chicken, making sure to get under the skin as well. Then, drizzle the lemon juice and vegetable oil over the chicken. 
  3. Allow the chicken to marinate for at least an hour. Ideally, it should be marinated overnight for the best results.
  4. You need to steam and deep-fry the chicken to achieve the same smoky flavour. 
  5. In a large pot, add a steamer rack. Then, add hot water but make sure that it doesn’t come in contact with the steamer.
  6. Tie the chicken legs with rope or twine and place them on the steamer. Make sure that it doesn’t touch the water. 
  7. Allow the chicken to be steamed for 45 minutes and cover the pot with a lid.
  8. Now take the steamed chicken and deep fry it in a deep pot with oil. Let the chicken be thoroughly fried for at least 5 to 6 minutes until it attains a golden brown colour.
