Instructions
  1. Chop the onions in half and prepare salt, curry leaves, garlic paste, turmeric powder, and ginger paste.
  2. Put the chicken in the bowl. Add garlic paste, salt, and turmeric powder. Marinate well and leave it for 30 minutes.
  3. Place the pan on the stove, add curry leaves, coriander seeds, cumin seeds, fennel seeds, black pepper, cardamom, cinnamon, and red chilli. Turn the flame to low and roast it for 2-3 minutes.
  4. Grind the roasted spices. Heat oil in a pan on the stove. Add chopped onions and curry leaves. Toss them until the onions become soft and translucent.
  5. Add the chicken pieces to the mixture and cook it for 5-7 minutes on high flame. Make sure you continuously stir the mixture.
  6. Lower the heat, add spices and coconut milk.
  7. Mix every well and cover with the lid. Cook until the chicken is nice and tender.
  8. Add salt if required.
