When it comes to a one-pot meal, quick fried rice can be the best bet. However, if you want to up your protein intake, then you can add generous pieces of chicken and make a flavourful chicken fried rice. Here, we share a Chicken Fried Rice recipe that is easy to make and is an ideal fix for a lazy lunch or dinner.
Take a deep vessel and fill it with enough water. On the side, wash the rice. Then boil the rice with salt and oil. Cook it until it becomes bite-like and then rinse in cold water. Add 1 tablespoon of oil on it. The oil helps to keep each grain of rice separate. Let it rest for 10 minutes.
Take a wok and heat oil in it. On high flame, add the garlic and onions. Sauté until onion turns golden brown.
Add the chicken and celery and stir-fry it well.
As a final step, add the rice, soya sauce, vinegar and chilli sauce. Stir the rice well until all the sauces are mixed and serve it hot.
It is important to rinse the rice in cold water after boiling it. You can then spread it on a baking sheet and let the excess moisture evaporate. This prevents the grains from lumping together.

Should I cook the fried rice on the high flame?
Yes. The wok or pan that you are using must be hot enough when you add the vegetables and rice. The key is to cook everything together quickly so that the rice remains hot but is not overcooked.
Can I add more soy sauce?
Ideally, a toasty and tawny fried rice will have only one or two tablespoons of soy sauce. This will make the rice light brown. However, if you like to have a strong flavour, then you can add the say sauce over your portion separately.
