  1. Let’s start with the filling. Heat some cooking oil in a pan. Add in your onions and garlic and saute them until they turn translucent.
  2. Poach the chicken breast for about 10-12 minutes. Drain it and then shred it as finely as possible.
  3. Add the shredded chicken to the pan and cook it until it changes its colour to a golden brown. To this, add the curry powder, peppercorns, clove, bay leaves, coriander powder and chilli flakes.
  4. Next, pour in the chicken stock along with some water. Let this simmer for 10 minutes.
  5. Add in the finely chopped capsicum and carrot, and let this sit for 5 minutes.
  6. Then, add the green peas along with some salt to taste. Allow this to simmer for another 5 minutes. Set this aside.
  7. To make the dough, combine the all-purpose flour, wheat flour, dry yeast, sugar and baking powder and some salt. Mix this well.
  8. Next, add small pieces of butter to this dry mix. Add water in intervals and combine the mixture till you get a dough-like consistency.
  9. Separate the dough into small ball-like pieces. Set this aside for about 20 minutes.
  10. Using a rolling pin, flatten these small balls into a circular flat shape. This should be big enough to hold the filling of the fried empanada.
  11. Add the filling to half of this circle and then fold over the other half to get a half-moon shape. Press the edges to seal them shut. Make sure to not overfill your empanadas. Repeat this process till you’ve used up the dough and the filling.
  12. Use the egg white from 1 egg and whisk it with a little bit of water. You have your eggwash ready.
  13. Brush the eggwash over each empanada and deep-fry it in a wok until it is golden on each side. Serve these hot with some salsa or hot sauce!
