Chicken Curry With Coconut Milk Recipe

Instructions
  1. Take a pan and roast the dry and whole spices, including red chillies, coriander seeds, pepper, mustard seeds, fenugreek, and cumin seeds.
  2. Add cinnamon sticks and then let the roasted spices cool down.
  3. Now, grind them into a fine powder.
  4. Take a wok and heat some oil to it. Now, add ginger, garlic cloves, green chillies, and onion to the oil.
  5. Cook well till they turn light brown.
  6. Now, add the chicken pieces and mix well. Cook for 5 minutes.
  7. To the mixture, add the masala powder prepared earlier. Mix well.
  8. Add turmeric powder and salt, and stir. Add curry leaves as well.
  9. Once done, close it with a lid and let it simmer for 10-15 minutes.
  10. Open the lid, stir the curry, and add half of the coconut milk to the mixture.
  11. Close the lid again.
  12. Check after 5-10 minutes when the chicken is tender. Add the remaining coconut milk. Stir well.
  13. Let it cook for 5 more minutes.
  14. Do not take the chicken off the heat till it is completely tender. It can take more time than stated above. Cook at your own pace.
  15. Remove from heat and serve hot!
