  1. Take a bowl and add the chicken pieces to it. Then add coconut milk, pineapple juice, tomato sauce, soy sauce, lime zest, garlic cloves, onion powder, cumin powder, paprika, ginger powder and salt. Mix the ingredients well. Let the chicken marinate for 3 hours.
  2. Take a small bowl and add lime juice, olive oil, chopped cilantro, minced garlic, sugar, pepper and salt. Mix the ingredients. Set it aside for 15 minutes.
  3. Take a non-stick skillet or pan. Heat some oil in it over a high flame. Add the chicken pieces and let them cook for 3-4 minutes on each side. Remove from the pan and cover with a foil for 5 minutes. Once cool, cut into thin slices.
  4. In the same pan add ½ cup of corn and ½ cup pineapple pieces. Sear them until golden brown. Keep them aside.
  5. Take a platter or a bowl. Add corn, pineapple pieces, chopped lettuce, avocado, red onion, cherry tomatoes, shredded carrot and olive oil. Mix all the ingredients. Then add the cooked chicken pieces and drizzle the salad dressing on top.
