Instructions
  1. Preheat the oven to 200°C, and line a baking tray with parchment paper. 
  2. Blanch the spinach and squeeze out all the extra water, and chop it with fresh dill.
  3. Take a mixing bowl, add cream cheese, salt, pepper, chopped spinach, and chopped dill. Mix well with help of a spatula or a spoon.
  4. Take a Licious Atlantic Salmon Fillet, and cover it thickly with the cream cheese mix from all sides.
  5. Roll the puff pastry dough according to the size of the salmon, so it can be wrapped in it completely.
  6. Wrap the salmon in the pastry, and apply a thin layer of whisked egg with the help of a brush. Make cuts according to your preference.
  7. Cut zucchini, red bell peppers, yellow bell peppers, carrots, garlic, and red onion to bite size pieces and place them on the baking tray. Drizzle them with olive oil.
  8. Place the salmon wellington on the baking tray along with the vegetables, and place the tray in the preheated oven for 30 to 35 min.
  9. Once baked, place it on a cooling rack for about 15 mins. Serve and enjoy!
