  1. In a large bowl, place the rice noodles and pour boiling water over them. Soak the noodles for about five minutes. Drain and rinse under cold water.
  2. In another bowl, mix all the sauce ingredients and keep aside.
  3. In a large wok or skillet over high heat, heat 2 tbsp of oil and add the onion and garlic. Cook for about 30 seconds.
  4. Add the chicken bites and cook for about 1½ minutes, until the pieces are cooked well.
  5. Push the chicken to one side and pour the whisked eggs and scramble immediately. Mix the egg with the chicken bites well.
  6. Add the tofu, noodles, bean sprouts, and sauce.
  7. Toss everything well until the sauce is absorbed and mixed with the noodles.
  8. Add half the peanuts and the garlic chives and toss quickly. Remove from the heat.
  9. Serve hot. Top with remaining peanuts and lime wedges, and beansprouts on the side for the authentic Thai style!
