Instructions
  1. Grind coconut and fennel seeds together in a mixer to form a paste (add water if needed). Set it aside.
  2. Take a wok and heat oil in it. Add bay leaf, cinnamon, and cardamom and saute them well.
  3. Next, add onion and curry leaves and saute for 5-6 minutes.
  4. Now add salt and turmeric powder and give it a good mix.
  5. Keep cooking till onions turn golden brown.
  6. Next, add the ginger/garlic paste and saute well.
  7. Add the chicken masala and give it a good stir.
  8. Further, add the tomatoes and cook till they’re soft.
  9. Add the chicken pieces next and mix well. Add water to the mixture (enough to cover the chicken).
  10. Now, add the ground coconut masala and mix thoroughly. Cover the lid and let it simmer for 10-15 minutes. Cook it for longer if you want a thicker gravy
  11. Once cooked, serve hot!

Tips and tricks:

  • Make sure the onions are soft enough before adding the other ingredients.
  • Do not deep fry the onions.

Serving suggestions:

  • Serve along with rice or roti. 
  • You can serve it with salad on the side.
