  1. Break the eggs in a bowl and add salt and turmeric to it. Whisk and add in the finely chopped onions, green chillies, coriander leaves and a little water. Mix well with a fork and set it aside.
  2. Heat butter in a pan until hot. Add in the beaten eggs and swirl the pan to spread the mixture evenly. Add two bread slices on top of it and immediately flip the bread after a little bit of the egg mixture sticks to them. Sprinkle black pepper and cook for about 30 seconds on a medium flame.
  3. Flip the omelette along with the bread slices and fold the omelette on the bread. Add ½ teaspoon butter to toast the bread slightly. Spread a dollop of mayonnaise on one side of the omelette and fold the bread to look like a sandwich. Cook well on the sides.
  4. Remove the bread omelette from the pan and cut into four pieces. Garnish with chopped coriander and chillies. Serve hot with a cup of tea.
