  1. Chop the coriander or cilantro stems and add them to a bowl. Add lime juice, garlic, chilli garlic sauce, fish sauce, sugar and oil. Mix the ingredients well.
  2. Take a large bowl. Add all the salad ingredients such as onion, tomatoes, cucumber, red chilli, roasted cashews, grated papaya and lettuce leaves. Then add the shredded chicken. Pour the salad dressing over the vegetables and give the salad a good toss. The salad is ready! Serve with noodles or have it on it's own.
