Instructions
  1. Take a small saucepan and add ¼ cup of water to it. Add the dry red chillies and bring the water to boil. Switch off the flame and let the chillies sit in the hot water for 5 minutes. In the meanwhile, take another pan and dry roast the coriander seeds and cumin seeds. Once roasted, take a mixer grinder and grind the roasted cumin seeds and coriander seeds. Then add the chillies with the water and garlic cloves. Add lemon juice and keep the paste aside.
  2. Take a pan and heat 1 tablespoon oil in it. Pan-fry the pieces for 3-4 minutes on each side and keep them aside.
  3. Take a deep-bottomed pan. Add coconut oil to it and add the onions. Fry the onions on low flame until they are translucent. Add 1 tablespoon of chilli paste and sauté the mixture. Once the oil starts to release, add coconut milk and ½ cup of water. Stir the mixture. Add cayenne powder and half of the lemon juice. Add salt and let the curry simmer for 5 minutes.
  4. Add the fried Cod cubes and continue cooking the curry for 10 more minutes. Add salt if required. Once the fish is cooked completely, remove the pan from the stove and serve the fish curry hot with steamed rice.
