Spicy Pressure Cooker Mutton Curry Recipe
Mutton curry is healthy, delicious, and flavourful. The spices bring out the flavours of the fresh mutton, and the slow cooking process adds an interestingly rich and wholesome feel to the curry. Earlier, most of the mutton masala recipes were slow-cooked in earthen pots to add depth to the flavours. The urban regions today use the pressure cooker to make this humble dish. Know that no matter the vessel, the secret to a good mutton curry lies in slow cooking.
Instructions
  1. Take a deep pan and put it on medium heat. Add ghee and oil and allow them to heat up well.
  2. Add the sliced onions and saute them until they turn brown. Add the chopped ginger and garlic along with chillies (chopped or paste) and stir the ingredients for about 3 minutes.
  3. Add the spices (cumin powder, red chilli powder, paprika powder, coriander powder and turmeric powder) in a bowl with little water to mix them well. Once mixed, add them to the pan and stir well.
  4. Add the mutton pieces and stir all the ingredients well till they are roasted. Ensure you stir them continuously.
  5. Add the tomato puree and stir well. Once the mutton pieces are well roasted, add ½ cup of water. Put a lid on the pan and allow to cook for about 20 minutes.
  6. Check if the mutton pieces are tender. If not, allow them to cook again with the lid on. You may increase or decrease the gravy as per your choice by adding water.
  7. Garnish with fresh and chopped coriander leaves. Enjoy with rice, chapati, naan or your choice of bread.
