Instructions
  1. In a bowl, add the cashew nuts and cover them with boiling water. Soak for about 15 minutes. Drain and blend to a smooth paste. Keep aside.
  2. In a bowl, add the raisins and cover them with boiling water. Soak for about 15 minutes. Drain and blend to a smooth paste. Keep aside.
  3. In another bowl, add all the marinade ingredients with a little water and mix to a smooth paste.
  4. Add in the chicken curry cut pieces and coat the marinade well with the chicken.
  5. Cover and place in the refrigerator to marinate for around 30 minutes or overnight.
  6. Heat oil in a pan, add the chicken curry cut pieces in batches and fry until golden brown. Remove and set aside.
  7. In the same pan over medium-high heat, add the chopped onions and sauté for about two to three minutes until soft and golden.
  8. Add the ginger and garlic paste and sauté until aromatic. Add the coriander powder, cumin powder, garam masala powder, red chilli powder, and ground ginger. Sauté well until aromatic.
  9. Add the tomatoes and cook until the tomatoes are soft and mushy. Add ½ cup of water and simmer for around two minutes.
  10. Stir in the raisin and cashew nut paste.
  11. Add the fried chicken pieces and water. Cover and cook for around ten minutes or until the chicken pieces are cooked completely.
  12. Garnish with fried raisins, cashew nuts, and chopped coriander leaves.
  13. Serve hot!
