What is Marghi Na Farcha? 

Marghi Na Farcha is a Parsi-style fried chicken dish made with chicken thighs that are marinated in spicy masala paste, dipped in eggs, coated in breadcrumbs and then deep fried until golden brown and crunchy. It is a delicious snack that is usually a part of celebrations in Parsi households and can be served with mint chutney and a coleslaw, or even as a side to a larger meal. 

What cut of chicken to use to make Marghi Na Farcha? 

While you could use boneless chicken breast to make this dish, we’d recommend using boneless, skinless chicken thighs. Thighs tend to be more flavourful and are more forgiving if you slightly overcook them – making them a great choice for using with high heat. Chicken breasts dry out quicker.

Some tips to keep in mind when you’re making Marghi Na Farcha: 

  • Make sure that all the pieces of chicken are of similar size, so they cook evenly.
  • Fry the chicken on medium flame to ensure even cooking. If you fry on high heat, the breadcrumbs could burn and the inside might not cook through. If you fry on low heat, the coating could turn soggy.

Instructions
  1. To make Marghi Na Farcha, combine ginger-garlic paste, lemon juice, red chili powder, garam masala, salt and pepper in a bowl. Add the chicken to the bowl and let it marinate for 10-15 minutes.

  2. While the chicken is marinating, heat the oil.
  3. Crack the eggs in a bowl and season it with salt, pepper and chilli flakes. Whisk this well. Spread out the breadcrumbs on a plate.
  4. Once the oil is hot, dip the marinated chicken in the egg mixture and then roll it in breadcrumbs making sure it is coated well.

  5. Gently slide it into the hot oil and fry on medium heat until the chicken turns golden brown on both sides.

  6. Drain on paper towels and serve hot with your favourite chutney.
