Instructions
  1. Cook the pasta in a pot of boiling water for 10 minutes.
  2. Heat the oil in a skillet. Add the chicken sausages to the pan.
  3. Allow 5 minutes to brown the sausage
  4. Remove the sausages from the pan and put them aside after they are done.
  5. Continue to cook by adding the onion and garlic to the pan.
  6. Keep stirring for 3 minutes constantly.
  7. Cook for another 4 minutes after adding the courgette/zucchini, mushrooms and red pepper to the pan.
  8. Stir in the diced sausages, oregano, passata, thyme, salt, pepper and balsamic vinegar
  9. Drain the pasta and set aside 50ml of the cooking water.
  10. Mix in the drained pasta and pasta water in the pan.
  11. Mix in the basil and spinach.
  12. Cook until the spinach has wilted.
  13. Transfer to a large baking dish and top with cheese.
  14. Bake at 180°C for 20 minutes or until the cheese is melted.
