- 6 medium-sized boneless chicken thighs diced into cubes
- ¼ cup soy sauce
- ½ cup orange juice
- 3 tbsp honey
- 1 tsp ginger finely grated
- 1 tsp sesame oil
- 1 tbsp oil
- 1½ tbsp unsalted butter
- 1 tsp spring onion leaves finely chopped
- ½ tsp sesame seeds toasted

- In a large bowl, whisk soy sauce, orange juice, honey, ginger and sesame oil. Add the chicken pieces, coat well and refrigerate for 10 minutes.
- In a non-stick skillet, heat olive oil on medium-high flame and add chicken. Fry until golden brown. This might take about 8-10 minutes. Take out the chicken and drain to remove excess oil.
- In the same pan, add the remaining marinade and add butter. Boil while stirring continuously and let it lightly thicken. Remove from heat, add the fried chicken to the pan and mix well.
- Garnish with fresh coriander and sesame seeds. Serve hot with butter-sautéed herbed rice.
