- 4 boiled eggs
- 1 tbsp chilli powder
- 1 tsp Black pepper powder
- 1 pinch turmeric
- 1 tsp coriander powder
- salt as needed
- 1 sprig curry leaves
- In a shallow pan, add oil and let it heat. Then add chilli powder, coriander powder, turmeric, pepper, salt and curry leaves. Stir well and sauté for 5 minutes on a low flame.
- Cut the boiled eggs into halves and place them yolk-side down in the sautéed spices. Fry for a minute and then flip carefully. Cook for another minute and turn off the flame.
- Garnish with chopped coriander and serve with pulao rice or naan.
While flipping the eggs, make sure not to damage the yolk.
