Mexican Omelet Recipe Loaded Mexican Omelet

A Loaded Mexican Omelet like its name is LOADED with all the traditional Mexican ingredients like avocados, jalapenos, black beans, tomatoes, corn, onion, cheese and a dollop of sour cream on top. Sounds amazing, doesn’t it? Traditionally, it would also have a generous portion of chorizo.

We’re using our delicious frankfurters and some red peppers but we’d definitely recommend adding some cheese to it too.
