Pistachio Crusted Chicken Breast With Saffron Sauce
This delightful crunch of nutrient-rich pistachio and the supremely rich flavour of saffron, when added to fresh and tender pan-roasted chicken breasts, will surely light up your Valentine's Day celebration! Here’s how to prepare it.
Instructions
  1. Place the chicken breasts on a platter and coat them with salt, crushed black peppercorns, onion powder, garlic powder, dried mixed herbs, Worcestershire sauce, and olive oil.
  2. Set aside for 10-15 minutes to marinate.
  3. Place the pistachios, bread pieces and parsley sprigs in a food processor to make a fine mixture.
  4. Pour this into a shallow, broad dish and smooth it out evenly.
  5. Place the marinated chicken breasts on a separate platter and brush with the mustard sauce on all sides.
  6. Coat them with the pistachio mixture until well coated on all sides.
  7. Rub butter or vegetable oil on a pan and roast the chicken for at least 15-20 minutes or until it's cooked.
  8. Place the chicken pieces on a serving plate and top with saffron mayo.
