  1. Drizzle one tablespoon of oil into the pan, then top with three tablespoons of fresh breadcrumbs.
  2. If using regular tomatoes rather than cherry tomatoes, coarsely cut them. Combine the tomatoes, oregano, salt, and extra virgin olive oil in a mixing dish.
  3. Place the fish on the breadcrumbs in the pan, season with ½ teaspoon salt and black pepper, and cover with the tomato mixture.
  4. Top the tomatoes and fish with the remaining breadcrumbs.
  5. Drizzle the vinegar over the breadcrumbs and the remaining tablespoon of oil.
  6. Bake for 15 to 20 minutes at 180℃, or until the fish is done.
  7. Serve right away.
