Creamy Tuscan Salmon Recipe

Season the salmon with salt and pepper and marinate for about 15-20 minutes.
Take a large pan and place it over medium heat.
Add oil, and before it is smoking hot, add the salmon. Cook for about 6 minutes until it turns a deep golden colour. Flip over and cook the other side for 2 minutes.
Place the fillets on a plate and reduce the heat.
Add butter followed by garlic and cook for about 1 minute till fragrant.
Add the sun-dried tomatoes and sauté for a few minutes.
Add spinach and cook till they wilt.
Add heavy cream, parmesan and herbs.
Bring the mixture to a simmer and cook for about 3 minutes until the sauce is slightly reduced.
Add the fish back into the pan and allow the sauce to coat it well.
Make sure your fish is cooked through before garnishing it with more herbs and lemon on top, serve it hot!
