Instructions
  1. In a bowl, add minced chicken, mashed potatoes and all the remaining ingredients except bread crumbs, oil and egg. Combine well and ensure the saltiness and spiciness is according to the required taste. Divide this mixture into equal-sized portions and shape them into round cutlets.
  2. Whisk an egg in a bowl and take some bread crumbs in a plate. Dip the chicken cutlet in egg and then roll it over the bread crumbs to coat the chicken cutlets well.
  3. Place the coated chicken cutlets in a non-stick pan or skillet and drizzle oil over them. Cook them on medium heat for about 8-10 minutes until crispy and golden brown. Keep pressing and flipping to cook the cutlet evenly.
  4. Serve hot with ketchup or mint chutney as starters or evening snacks.

Recipe Tips

If you don’t prefer egg plus bread crumb coating, you can substitute egg with ¼ cup besan or gram flour and bread crumbs with ½ cup rice flour.

Frequently Asked Questions

Why do bread crumbs fall off the cutlets while frying?

If your cutlets are soggy or wet, the egg binding may not be able to hold off the crumbs. To avoid this from happening, make sure your cutlet mixture is not wet before dipping it in the egg. You can let the cutlets rest after dipping them in egg and bread crumbs for a while before frying.

How to get perfect crispy chicken cutlets?

Make sure you fry the cutlets on medium-high heat. If you fry them on low heat, they can take a while to cook, not allowing them to become crispy.

Can I bake the cutlets instead of frying?

Yes. You can bake the cutlets in a preheated oven at 400°F for about 15 minutes. Flip and bake for another 5-8 minutes.
