However, in South Asia, this fish sauce is typically made using anchovies, salt, and water, giving it the signature fishy, intense, and salty taste that people love. The South Asian version—particularly the Vietnamese version—of the anchovy fish sauce is also runnier in consistency compared to other versions. 

In this recipe, we’re going to share with you the French-inspired version of their famed anchovy sauce called anchoïade, which uses white wine vinegar. In this recipe, we’ll swap it for red wine vinegar.

This classic fish sauce is a lengthy process because you will need to ferment the anchovies for up to 6 months. However, the taste is worth the wait.
Instructions
  1. Take 250 gms Anchovies and combine them with 100gm salt
  2. Mix well
  3. Store it in a cool place with no sunlight
  4. Ferment it for 6 months
  5. Take a blender or food grinder and combine the anchovies, garlic, thyme, dijon mustard, pepper, and red wine vinegar; blend or grind into a smooth paste.
  6. Drizzle some olive oil into the mixture while blending. Use as much as you need to get the desired consistency.
  7. Blend till the paste is smooth and partly shiny.
  8. Pour the paste into a bowl
  9. Enjoy alongside your favourite fish fry or seafood.
